Organic Durum wheat berries are a high-protein hard spring wheat traditionally used to produce semolina flour, the key ingredient in authentic pasta. Durum wheat is known for producing a yellow, mealy flour with excellent structure, elasticity, and cooking quality.
Once ground, durum wheat is referred to as semolina flour, and all traditional semolina pastas are made from the flour of durum wheat. Its protein strength and coarse texture make it ideal for pasta, couscous, and other specialty grain products.
